This tasty, gluten-free, nutrient-dense ancient grain is comparable in protein to wheat, but has higher fiber, calcium, and three amino acids. It cooks quickly (~20 minutes) and is an easy substitute for any meal you could use rice, quinoa, or couscous in. Growth-wise, proso millet (the kind grown in the US) is pretty drought-tolerant and not often bothered by pests. It grows quickly (~60 days) and most of the US's crop is grown in Colorado, South Dakota, and Nebraska.
