You may have only heard of pearled barley in the past, but hulled barley is used and cooked in the exact same way. The only difference is how much of the good-for-you stuff on the barley (bran) is left after processing. A good comparison is pearled barley is like white rice or all-purpose flour, where everything good for you has been removed from the end product, and hulled barley is a whole grain food like brown rice or whole wheat flour, with only the inedible husk/hull removed so it is, well, edible. 🙂 The pile of barley on the right in the example picture above is what the barley you're ordering will look like.
